Herbs are very tasty and most herbs have very good health properties. I think this is the reason why herb gardening is becoming more and more popular these days. As I have mentioned, herbs have a practical value and they serve a specific purpose.


Herbs cannot only be used for cooking bur most have a pleasant aroma as well. A well tended herb garden can also be very beautiful. It is also a very good idea to go into the medicinal properties of herbs. Even your pets can benefit from herbs. My cat is very old and he has problems with his digestion and catnip sprinkled on his bed etc. really helps to calm him and stop the vomiting. So, even your pets can benefit!

1. Drying your herbs.

 

A very important of herb gardening is drying the herbs for use during the winter months, especially if you plan on cooking with them.  First the tops of leafy herbs have to be cut, washed, and hung up for the water to evaporate.  Then, tie stems together and hang up in a paper bag to dry.  After two to three weeks they must be removed; crumble the leaves, dry them out in the oven, and store in a glass jar.


2. Basil.


One of the most common herbs gown in herb gardening is basil.  ”Dark Opal“ and regular green basil are beautiful additions to any garden and often used as decoration.  Dark Opal has light pink flowers and dark red leaves.  Basil isn’t just used for its looks; it is used for extra flavor in tomato juices and pastes. If truth be told almost any vegetable can benefit from sweet basil. Sweet basil can be added in rather large quantities to enhance the flavor of any vegetable.


3. Chives.


Chives are very petite looking and resemble a blade of grass. Chives are very decorative and can even be planted amongst your flowers. They are much stronger than they look, however, and will grow well through a drought.  Their toughness and sturdiness makes Chives a perfect plant for herb gardening, especially if the gardener doesn’t want plants that require a lot of hassle.  Chives are good used in salads, egg dishes, and many different sauces.


4. Garlic Chive.


Another kind of herb is garlic chive. Garlic chives are even sturdier than normal chives. Garlic chives look beautiful in the garden and they taste exceptionally well in any dish using garlic. Sprinkle your garlic chives on your dish only about ten minutes before serving and taste the difference! As with chives garlic chives also taste very good in salads and they are very easy to grow.


5. Mint.

 

Mint is also very simple to grow and is good to use in mint jelly, mint juleps, lemonade, and any other kind of fruity drink.  Mint is also good in herb gardening for its unique minty smell. To be honest, mint grows so well that you actually have to keep on the lookout to prevent it from taking over your whole garden. Please do not let this upset you. Keeping them at bay is easy as long as you do it regularly and their many uses and their lovely flavor makes up for the little extra work they involve.


6. Thyme and sage.


Two very useful herbs that appear in nearly every herb garden are thyme and sage.  Both of these herb gardening favorites are used for flavoring soups, chicken, turkey, pork, and other sausages.  Sage is also grown sometimes for its beautiful blue spiked flowers. A tea made from sage and taken before meals is very calming and it is even called ”happy tea“ by some. If you have a hard day ahead of you, sage tea is the best pick-me-up you can get.


7. Lavender.


Lavender is probably the best smelling herb in all of herb gardening and is often used in candles, as a perfume scent. Lavender can also be used to improve the smell in linen chests.  The light purple flowers smell absolutely lovely. Lavender also has calming properties and a few crushed lavender flowers in a hot bath is a very good way to de-stress after a long and difficult day. Lavender is also very tasty when added to baking such as bread. Never underestimate your lavender! Lavender is easy to grow and makes a beautiful display in your garden.


8. Borage.


Borage can be used in salads and it has very good anti-inflammatory properties. Borage is not quite as easy to grow but it is well worth the extra trouble.


9. Chervil.


Chervil can be used in egg dishes.


10. Sweet Marjoram.


Sweet marjoram can be used to flavor lamb, fish, salad, soup and pasta dishes. Sweet marjoram looks very attractive in your garden and it is relatively easy to grow.


11. Sesame.


Sesame is used to flavor crackers, cookies and bread. Sesame is very tasty and really transforms ordinary bread into something very special.


12. Dill


Dill is a little more difficult to grow successfully, but as with borage it is well worth the trouble. Dill is especially used to flavor fish dishes and is also very tasty in any meat dish as well as in pickles.

It is worth remembering that a well kept herb garden is very attractive and can very easily fit into your flower garden. It is also worth taking note of the medicinal properties of hers.
